Found it at a super price, and just wondering if it's an appropriate protein to feed? I use the BiTR mix.

I feed beef and I imagine veal just like a younger beef :) it is the same nutritionally and totally fine to feed.

Usually it is more expensive but if you have a great price for it then I would go for it.

Unless it is ground make sure to factor in the amount of bone and fat on the meat to evaluate if it's great value

Veal is baby cow. Some people have issues with how the calves are treated while they are being raised--here in Nevada it is hard to find because of that. But as @zoinks says, it is nutritionally the same as beef.

Well, both kitties flat out refused to eat it! Darn it .... Now I have 3 dozen meals to toss out! Grrrrrr ... Is it necessary to switch their protein, or can I just stick to the chicken that they love?

You don't have to switch and you might find they get picky with certain types.

When I tried chicken Alfie turned his nose up at first.

I wouldn't toss it, there are some ways to tempt them into trying it. Tuna juice, some chicken mixed in, fortiflora.... :)
