@johnathan hopefully someone with lots of raw food experience will chime in. Venison is certainly a meat they would and could eat.

Oh yes, Venison is great for cats. You say hamburger -- as long as it's just ground venison, that's fine. But if there are spices in it, no way.
My crew eat venison, camel, and kangaroo. Venison is usually quite lean, so make sure you balance with something that has a bit of fat in it (ie ground turkey that has fat included). I rotate between venison, camel (which is the fattiest of the three I feed), and kangaroo (it's quite lean too) about every two meals.

@johnathan -- sorry for not being clear. I mean follow a meal or a few meals of one protein with a different one.
For instance, I have two Sphynx. They each eat about a quarter pound of raw (protein plus the Better in the Raw mix in) per meal. The jars I use to store their food in hold about a half pound of raw. So for breakfast they might get camel, then lunch they get venison, and dinner they get kangaroo. So I just rotate the proteins from meal to meal. But I know some people store raw in larger containers so they might rotate proteins every few meals or a day or so.
Does that make sense?

@johnathan you don't have to change proteins, it's just that some cats like the variety. I have been feeding mine ground turkey with BiTR mix for well over a year, and they are doing great. That being said, there should be no problem using the venison that you have stored. I have tried a few different proteins with my cats, and they just won't eat anything but the turkey!

A variety of proteins is not necessary, but some cats like the variety. Plus, one day Max said no to kangaroo, so I was down to two different proteins for months. I'm back to three. I just worry that if I feed only one type and they get sick of it, I have to work harder to find what they will eat next. Lol

Switching is good for balancing out the nutrients. For ex, duck is high in fat while rabbit is low in fat. Could also be some meats are higher in phosphorus and they throw the Calcium to Phosphorus ratio off. I'm like Xandria in that I like to rotate every meal so they don't get bored with one food, but nutrition wise rotating every few days is fine.
