kittens and raw

I feed my dogs and cats a raw diet. (the cats do get canned on occasion)I am trying to decide what to do when the new guy gets here. He is currently getting Nature's Variety canned/ wet and some of their frozen raw. I will get some of that to start out with. I'm not sure what to leave out during the day though. What do you raw feeders do with kittens?
